How do directors film people walking?

What can we learn about how to shoot characters walking from this scene in Peaky Blinders? 
Shooting characters walking is one of the important ways to portray a characters persona, in this Peaky Blinders scene we learn that we must include the movements made by these people..for example if they have a limp.  Characters need to be filmed walking by including shots of the legs or feet of those characters otherwise the scene itself doesnt look right.
